Press restaurant will open a café and marketplace called Under-study next door in the upcoming Napa Valley Museum of Art & Culture (the MAC) in St. Helena, likely this summer.

The 4,500-square foot space that was Dean & Deluca and more recently Gary’s Wine and Marketplace partially reverts back to those uses. It will be operated by Press chef Philip Tessier and director of operations Justin Williams.

Tessier and Williams intend to offer top cuisine that is less expensive than at Press and “create a playground of exploration and learning for the Under-study team.”

Plans include a patisserie, a butcher shop with dry-aged meat by Flannery Beef and Snake River Farms, seafood from local and Japanese purveyors, charcuterie by Tony Incontro and a counter service area.

An exhibition kitchen will feature an interactive program focused on sharing knowledge, creating and providing digital content and educational experiences.

The back kitchen will operate as a catering business.

They will preview their menu during BottleRock with items like vegetarian stracciatella “eclair” of fermented pepper, Persian cucumber and Tenbrink strawberries; pea and truffle tart with Incontro Cured guanciale, spring peas and shaved Urbani black truffles; gluten-free lobster corn dog with Tsar Nicoulai caviar; and gluten-free salmon chicharrón, black lime, avocado kosho and cilantro.

Opening hours will be 7 a.m. to 6 p.m. daily.
